Grilled Blender Pasta with Summer Vegetables

Ingredients
  

  • 4 tomatoes
  • 2 red or yellow bell peppers
  • 1 head garlic
  • 1 shallot
  • 1/4 cup fresh basil
  • 1/2 tspn salt
  • 1/4 tspn pepper
  • 1/2 lb pasta
  • olive oil

Instructions
 

  • Preheat your grill
  • Cut the tops from the bell peppers and scoop out the membrane and seeds
  • Cut the top 1/8 of the garlic head off, exposing the cloves inside and peel the shallot.
  • Place the garlic and shallots in a small section of aluminum foil, sprinkle with oil, then wrap them up, folding the foil over them.
  • Combine the peppers and tomato in a bowl and coat with oil. Sprinkle 1/4 tsp of the salt and pepper on them.
  • Add peppers, tomatoes and foil packet to hot grill.
  • Remove from grill when nicely charred, about 5 minutes.
  • Add the peppers, tomatoes and shallots to blender. Take the garlic and "pop" out the cloves from the head into the blender. Blend until smooth.
  • Cook the pasta according to the package and combine with sauce when finished. A nice sprinkle of cheese will enhance the sauce!
