Grilled Blender Pasta with Summer Vegetables

- 4 tomatoes
- 2 red or yellow bell peppers
- 1 head garlic
- 1 shallot
- 1/4 cup fresh basil
- 1/2 tspn salt
- 1/4 tspn pepper
- 1/2 lb pasta
- olive oil
Preheat your grill
Cut the tops from the bell peppers and scoop out the membrane and seeds
Cut the top 1/8 of the garlic head off, exposing the cloves inside and peel the shallot.
Place the garlic and shallots in a small section of aluminum foil, sprinkle with oil, then wrap them up, folding the foil over them.
Combine the peppers and tomato in a bowl and coat with oil. Sprinkle 1/4 tsp of the salt and pepper on them.
Add peppers, tomatoes and foil packet to hot grill.
Remove from grill when nicely charred, about 5 minutes.
Add the peppers, tomatoes and shallots to blender. Take the garlic and "pop" out the cloves from the head into the blender. Blend until smooth.
Cook the pasta according to the package and combine with sauce when finished. A nice sprinkle of cheese will enhance the sauce!
